Tasting Note
Aromas of ripe cranberries and sweet Christmas spices. These characters carry over to the palate and are joined with confectionary notes of raspberry hard candy and dark chocolate.
Winemaking
Hand-picked and whole bunch pressed with partial carbonic maceration. Open top fermentation for about a week before fortification with a mix of neutral and brandy spirit. Basket pressed. Matured in French oak for 12 months.
Cellar
Our ‘One Eyed Jack’ is vibrant and drinking beautifully already. If you can hold on, try to cellar for a couple of years and watch this wine develop and mature.
