2023 ‘King Fizzard’ Pétillant Naturel
Pétillant naturel translates from French to “natural sparkling”. It is the ancestral method of creating sparkling wine using wild yeast fermentation interrupted by bottling of the wine before primary ferment is complete.
Composition
100% Sauvignon Blanc
Tasting Note
Lifted orange blossom aromas with hints of passionfruit and lifted lime. The palate is dominated with characters of orange marmalade , sherbet and pineapple; like tropical fruit punch. Consistent bubbles, delicious from start to finish.
Winemaking
For this batch we used 100% Sauvignon Blanc that was hand picked.
It underwent carbonic maceration creating some beautiful complex characters then we pressed to tank allowing it to almost finish fermentation, (under temperature control) before bottling at 10g/L of residual sugar. This wine is also fully certified organic (ACO).
