2015 ‘The King’ Cabernet Sauvignon

100% Cabernet Sauvignon

Tasting Note
Aromas of blackcurrant, cedar, leather and mushroom. These characters and earthy tones also carry through to the palate which is dominated by black fruits, leather and spice. Fine grained chalky tannin contribute to lingering finish.

We used traditional winemaking practices including a mixture of barrel and open top fermentation, hand plunging and manual basket pressing to make this complex wine. Extended skin contact for 28 days post-fermentation add to the tannin structure. Maturation in French oak, 40% new, for 18 months.

Our favourite way to enjoy The King is with a huge pile of meaty marinated ribs and a cracking game of footy on the TV. Perfection.

Open-fermented, 35 days extended skin contact, basket-pressed, matured in French oak (30% new) for 18 months. A totally convincing medium to full-bodied cabernet that repays all the vinification steps; cassis, bay leaf and dried herbs hit the bouquet and palate in precisely the same way, all up classic medium-bodied cabernet style, tannin emerging at just the right moment. 95/100 James Halliday
