2017 “Dead Man’s Hand” Shiraz
Lifted aromatics of black forest cake, plums and cherries with a cedary oak background. Luscious and rounded berry characters give way to chalky tannin.
Whole bunch pressed with partial carbonic maceration. Open top fermentation, hand plunging and manual basket pressing were utilised to allow the vibrant fruit characters to be showcased. Matured in French oak for 14 months.
