Clear in colour, delicious and delicate. Green apples, pears and buttered toast dominate the aromatics. A persistent and fine effervescence carries the palate of grapefruit, lemon zest and cashews through the mouth. Perfectly in balance.
Our Queen of Diamonds is the real deal when it comes to sparkling wine. Two fermentations occur, the secondary ferment is in the bottle. It’s bottled aged on yeast lees for 36 months to add complexity and toasty notes. Riddled. Disgorged then dosaged with 4.5g sugar.
The perfect aperitif with freshly shucked oysters or delicious served with croissants and smoked salmon for breakfast!
