The chardonnay grapes were hand picked and sorted before being whole-bunch pressed and barrel fermented in 50% new French oak. This vintage was 100% wild yeast fermented adding to the wines mouth-feel and giving great complexity and texture. The chardonnay underwent 30% wild malolactic fermentation. Maturation in French oak for 12 months.
This Chardonnay is begging to be enjoyed with scallops, fresh crayfish or oven baked dhufish.
