Tasting Note
Dark inky purple with lifted aromatics of ripe plum, cherry and blackberry. Hallmark Margaret River Mint/Eucalypt aromatics carry through to the palate which also shows flavours of dark chocolate and mocha. The finish is long lasting with elegant silky tannin; persistent acid will soften as the wine ages.

Winemaking
The grapes were hand-picked and hand sorted. After crushing the juice underwent a 10% drain off to concentrate tannin content. It was then fermented and hand plunged in barrel. Following fermentation the wine was basket pressed and returned to French oak, 35% new, where it matured for 18 months. This wine is unfiltered.
